How to Make Ejjeh–Egg and Parsley Omelets

How to Make Ejjeh

Ejjeh is a typical Mediterranean breakfast meal. Ejjeh resembles a vegetarian omelet except it does not all of the same ingredients. This dish is quick to prepare if you are in a hurry, and it's a tasteful one as well!


  • 5 eggs
  • Allspice (half a teaspoon or less)
  • Cinnamon (half a teaspoon or less)
  • 1 teaspoon of baking powder
  • Small amount of parsley (around ¼ cup)
  • 1 small onion (red or white)
  • 1/4 cup milk
  • 1/4 cup corn oil


  1. Crack the eggs.Take 5 eggs out of the refrigerator and crack them into a bowl.
  2. Whisk eggs well.Make sure the eggs are properly beaten with no yolk showing. Set the bowl aside.
  3. Prepare the onions.Peel and cut the onion in half. Take one half of the onion and begin dicing into fine pieces. Repeat this process until the entire onion has been diced. Proceed to add some salt over the chopped onions.
  4. Add spices to onion.Take about half a teaspoon of both cinnamon and allspice and sprinkle it over the chopped onions. If you need a visual estimate of how much of each spice should be added, think about both spices combining to create one full teaspoon. When adding the spices make sure to mix the onions as well to ensure that they properly seasoned.
  5. Add the flour and baking powder.Add the tablespoons of flour in increments and make sure to whisk the mix after every addition. Doing so will ensure that no clusters of flour will be left. Once the flour is added, whisk in a teaspoon of baking powder.
  6. Add 1/4 cup of milk to ingredients in bowl.The addition of milk will allow the Ejjeh to be fluffy and pancake-like.
  7. Wash, dry and cut parsley.Pat dry the parsley using paper towels or a clean tea towel. Once the parsley is washed and dried, place it on the cutting board and finely dice.
  8. Add parsley.Incorporate the parsley in the rest of the mix and whisk to combine.
  9. Preheat oven to 350 °F (177 °C).
  10. Grab your circular baking pan and add a 1/4 cup of corn oil into the pan.Rotate the pan in a circular motion to evenly spread the oil to every part of the baking pan.
  11. Place pan into oven for 2 to 3 minutes.This step preheats the pan and gets the oil ready to bake.
  12. Remove pan from oven after 2 to 3 minutes.When opening the oven, you should hear the oil crackle which is the "ready" signal. Remove the pan and evenly spread the mix to cover the entire pan and return it to the oven.
  13. Bake Ejjeh for 15 minutes.
  14. Open oven after 15 minutes cook time is completed.Remove the pan from the oven and set the oven to broil on high. Cut the Ejjeh in wedges as if you were cutting up a pizza. Return the pan back to the oven.
  15. Broil Ejjeh.This helps to create a crispier surface that enhances the taste of the dish!
  16. Remove the Ejjeh from the oven and enjoy!
