Pollo Asado(Roast chicken Puerto Rican style)
Spanish-Style Roast Chicken
Preparation time:15 minutes
Cooking time:45 minutes
2 red onions, cut into wedges 2 red peppers, deseeded and chopped 300g (10oz) chorizo sausage, cut into thick slices 6 tomatoes, halved 1 garlic clove, unpeeled 6 chicken thighs 1tsp smoked paprika 1½tbsp olive oil a few sprigs of thyme
1Heat the oven to 200 C, 180 C fan, 400 F, gas 6.
2Place the onion wedges, peppers, chorizo, tomatoes and garlic in a large roasting tin and place the chicken on top.
3Season well, sprinkle with paprika, then drizzle with oil, and scatter with the thyme.
4Roast for 45 minutes or until the chicken juices run clear. Serve with herby rice.
